Job Description : POSITION SUMMARYThe Fish Cutter is responsible and is expected to be able to cut fish to all levels of production necessary. Cutters must be able break/cut whole tuna and other various species down to fillet and “poke” specifications.ESSENTIAL DUTIES AND RESPONSIBILITIES1. Scales, heads, guts, and fillets fish for restaurant and supermarkets.2. Wraps and packages fish for delivery or storage to both local and non-local customers.3. Comply with company’s State and Federal guidelines and expectations regarding Food Safety, HACCP and general Safety procedures.4. Assist in all of the fresh seafood monthly inventories.MINIMUM QUALIFICATIONS AND EXPERIENCE1. High school diploma or GED.2. Current Tuberculosis clearance.3.
